Recipe: Cumin-Marinated Shrimp

With cumin, garlic and lime, this simple shrimp recipe is sure to be a hit at your next get-together.

Ingredients:

2 pounds of large shrimp

3/4 cup fresh lemon or lime juice

4 Tablespoons ground cumin

3 Tablespoons minced garlic

1 Tablespoon honey or agave

1 Tablespoon grated lime zest

1 Tablespoon olive oil

1 Tablespoon crushed red pepper (optional)

Salt and pepper to taste

Handful fresh cilantro

Preparation: 

Clean and devein shrimp. Pat dry with paper towels.

In a large bowl, assemble your marinade.

Submerge the shrimp in the marinade and toss well. Cover and refrigerate for one hour or up to 24 hours.

Discard marinade and heat one tablespoon of oil in an iron skillet on your stovetop or atop your outdoor gas grill. Cook the shrimp until pink, and remove from heat. Taste test and adjust salt and pepper as needed. Sprinkle with fresh cilantro and serve immediately.
